cold angel hair pasta truffle oil abalone caviar
Foodies, here’s another Christmas recipe to serve up a gastronomic meal. Combining all the extravagant ingredients, the chilled pasta is drenched in a fragrant Truffle Oil, teasing the palates of your guests even before they arrive on the table.

If you have not tried Angel Hair Pasta aka Capellini, it is a very thin variety of Italian pasta. Using the Hock Hua Tiger King Australia Wild Blacklip Abalone ( 福華補品 澳洲野生黑边鲍鱼 ), the highly-prized sea snails are sliced thinly and used as topping in this pasta with other luxury ingredients like Caviar and Sakura Ebi.

So how did I get the idea of making a cold pasta dish? Well, I borrowed the idea from few of my favourite restaurants like Da Luca Italian Restaurant, Gunther's Restaurant and Les Amis. This pasta will probably burn a hole in your pocket, so why don’t you buy the ingredients and fine dine at home instead?

Twin Granoro Cannelloni with Fauchon Goose Liver Foie Gras

#Cannelloni, like Lasagna, are both popular in Italy and used for traditional egg pastas. A cylindrical type of pasta, Cannelloni is generally served baked with a filling like minced beef covered by tomato sauce. I have always wanted to try Cannelloni but since I am not a fan of tomato-based pasta like the Spaghetti Bolognese, I kept in on hold till an idea of using Foie Gras surfaced.

stuffed granoro cannelloni with fauchon foie gras recipe
#Fauchon has been the culinary creator for gourmet products such as Foie Gras, fine chocolates and fruit-flavoured teas. Being a fan of this goose liver, I decided to stuff my Granoro Cannelloni with Foie Gras. The tube of the pasta is huge and requires a lot of fillings so I cheated and mixed my liver with mushrooms. Not knowing what method is best since it was my first attempt, I did a twin pasta - one served original with a drizzle of Balsamic Vinegar and Grated Parmesan Cheese, and the other Baked with Mozzarella Cheese. The result was a satisfying one and I am glad my family had enjoyed my efforts.

Recipe: Tarako Aglio Spaghetti

Tarako たらこ (cod roe) is usually made from Alaskan Pollock, although Tara (鱈) actually means cod in Japanese. I found some nice Tarako at a Japanese supermarket yesterday & decided to cook Tarako Aglio Spaghetti for dinner. I picked up a tray of crabmeat alongside & some really huge Shitake mushrooms to go with the pasta.

½ pkt of spaghetti
2 Tarako
7 pieces of fresh crabmeat
3 pieces of Shitake
4 cloves of garlic (sliced)
½ tsp of chilli peppercorn
1 tbs of mayonnaise
1 tbs of white wine
½ tsp of butter
3 tsp olive oil
2 tsp salt
Pepper to taste

Grilled Shitake
3 pieces of big Shitake
Cream sauce of your choice (Carbonara, Mushroom, Tomato etc)
3 tsp of grated Parmesan cheese
1 tsp butter

  1. Squeeze out the roe & dispose “skin”.
  2. Mix roe with mayonnaise.
  3. Rinse & slice the mushroom for pasta; shred the crabmeat & set aside.
  4. Rub butter all over mushrooms to prepare for grilling. Fill them with cream sauce & sprinkle cheese on top. Put to grill untill brown or for about 5mins.
  5. Follow the instructions behind the plastic wrapper of the pasta. Different types & brands of pastas require different cooking time. Put 1 tsp oil & 1 tsp salt into boiling water & add spaghetti. I like my pasta Al Dente but leave to cook a little longer if you prefer it softer. Remove & drain. Add butter & mix well.
  6. Heat 2 tsp olive oil in pan. Add garlic & fry till fragrant. Stir in chilli, mushroom.
  7. Add pasta, wine & salt, then crabmeat & tarako.
  8. Stir well & serve with your grilled Shitake.

Recipe: Kero-Keropi Twin-Pasta

Almost all kids dislike vegetables & my son was no exception when he was younger. Try creating fanciful cartoon characters to divert their attention, it always work. I would use lots of vegetables & “mould” them into cute little shapes to add them to my son’s dishes those days. I'm delighted that this simple recipe has been featured @ Allrecipes Asia!
I haven’t made these cartoon stuff for a long time as my son is already in his teens. You can see my Kero-Kero’s here isn’t smiling as sweetly as before. But on rare occasions, I do prepare for my guests’ young children. I guess practice makes perfect. I’m sure you can do a better job.

1 cup Penne
5 tbs of Tomato paste
5 tbs of Carbonara paste
3 shitake mushrooms
5 slices of fish (or any other)
1 slice of ham
2 slices of carrots
2 eggs
Seaweed
1 lettuce or cabbage leaf
1 tsp oil
1 tsp salt
Pepper to taste
  1. Add oil & salt to boiling water & add penne. Cook till soft, drain & set aside.
  2. Marinade fish with salt & pepper & set aside.
  3. Rinse & dice mushroom. Cut ham into small pieces. Also cut some into stripes for decoration. Boil 1 egg & cut into slices. Use the other egg to make a thin omelette. Blanch vegetable leaf & carrots.
  4. Divide pasta into 2 bowls. Mixed 1 bowl with tomato paste & the other with Carbonara.
  5. Tomato Penne - add fish. Carbonara Penne- add diced ham & mushroom. Mix well & microwave for about 3 minutes (ensure fish is thoroughly cooked).
  6. Scoop both pastas onto plate, keeping them separate. Head – cover carbonara with lettuce. Use the egg slices & add tiny seaweed to make Kero-Kero eyes. Use carrots to make the lips & hands. Body – Cover the tomato pasta with omelette. Use ham stripes to decorate the clothes. Voila! You’ve got your Keropi Pasta for your kid!

Try out this 3-day Detox Program!

I've been hearing a lot about detox program but haven't really got to it until I've been given a detoxification menu by a nutritionist last week. Being a food-lover & I practically live to eat, it's really tough just to think about it.

But it's gonna be different this time. I was determined to put myself into the program the day after I got the menu but Valentine's Day was approaching, so I told myself I would start the next day, & the next day, & the next day. I came up with a whole lot of dumb excuses just to postpone this torturing experiment cause temptations were everywhere. People were eating around me & that's a bad idea.

Sometimes, I feel that only Garfield really understands me, cause we belong to the same world. I've put together my fave diet quote + my idol's photo = perfect match! Gosh! How I love this picture........

....... back to serious business. So I've learnt - Rule no. 1: Stay away from greedy people, you're never gonna make it. Rule no. 2: Get an "accomplice". Well, in my case, I've induced my family members to join me in this scam. And I've started, this morning!

Obediently, I'd 1 glass of soya milk + 1 apple for breakfast & for lunch, clear vegetable soup + 1 slice of papaya. Hooray, I did it!! But honestly, I'm starving as I'm writing this blog & I've just drank another glass of apple cider. I'm not sure how long I can last - 3 days seem too long. Oh God, I'm so weak now! Mentally, I'm not strong. I need to keep my mind off my Ben & Jerry Cherry Garcia, my pineapple tarts (specially baked by my dear friend, Elena), my fave deep-fried chicken wings etc, etc, etc.

I'm always looking forward to dinner time to feast but I'm just gonna be eating grass & leaves tonight. Anyway, since I'll have a cleaned, pure & healthy body after this 3-day ordeal, I'll keep to it. Now, this detox program has to be done consecutively in a month to enjoy the benefits. It's for every individual regardless of weight.

Things to do during the 3 days:
  • Drink 2 glasses of Apple Cider Vinegar per day (1 tbs mix to 1 glass of water) Tasted terrible so I've added honey
  • Drink at least 2-3 litres of water daily

Food to avoid:
  • No rice, noodle or bread
  • No dairy products & meat
  • No caffeinated beverages (soft drinks, milo, coffee or tea)
  • No potato, tapioca, yam & corn
  • No fruits such as durian, mango, lychee, longan, rambutan, mangosteen & banana (Don't ask me why)
Let's work towards a healthy lifestyle!

Fine Dining: At Home (That Perfect Table Setting)

Dining at home with your Valentine’s Date tonight?

Surprise your partner, set the mood right! It’s the perfect time to bring out those good stuff that have been hiding in your kitchen cabinets. Here are some Savoir Faire on how to set your table for a romantic chinwag:

1) Display your designer chinaware, #WMF cutleries, crystal champagne flutes on your placemats, they’re too pretty to be left in the cabinets. Get the ambience right. These serve as a beautiful backdrop for a romantic meal……… the table's the mirror of your personality.

diy valentines day table setting2) A romantic table’s incomplete without flowers. You can choose a centrepiece or scatter flower petals over the table like what I did. I love roses but they’re too expensive today, substitute it with other species instead.
diy romantic valentines day table settings3) Play sentimental, soft music & you may even burn some home fragrance oil eg. Sandalwood (easily available at The Body Shop)

Oops! Gotta rush off to prepare tonight’s meal. Come back tomorrow if you wanna know what I’ll be cooking later……. I’ll be posting my recipes.

Oh ya, forget the tv & no handphone!! You don’t wanna spoil the atmosphere.

Happy Valentine’s Day!

Fine Dining: Da Paolo II Giardino

I’m a Da Paolo fan, especially the one at Holland Village. But yesterday, my friend suggested going to the the one at Bt Timah instead. I’ve only been there once sometime back as it’s kinda inconvenient if you don’t drive. It’s a little different from the one at Holland V, not so commercialized. I like the ambience, the long stone-lined walkway sheltered with cool bamboo & slate walls; into the little stone garden with al-fresco tables & onto the luxuriously sleek interiors...... and I love their see-through glass kitchen where you can have a peep at the chefs.

The set lunch menu’s pretty reasonable @ S$24++ for a 3-course. But then, I was in a mood for their Beef Carpaccio S$24 & Ink Squid Pasta S$26, so I went for Ala Carte instead.

I was introduced to this delicacy many, many years ago during a lunch over at the Holland V outlet with my ex-colleagues. One of them ordered this black spaghetti thingy & offered us some. None of us was willing or daring enough to try what we thought was yucky then. Not to mention his dirty, stained lips & teeth with each mouthful scoop into this alien dish. It was just disgusting but strangely, he was clearly enjoying his food.

Well, it took me sometime before I finally picked up the courage to try this “ugly duckling”. I was curious to find out why this pasta is so popular. I’ve never regretted that moment since. Of course I was not alone then. I managed to convince another friend to go for this creepy experiment. As soon as we finished our starters, the server exchanged our usual white napkins with black ones instead. Guess I don’t have to tell you why………

The pasta came Al Dente, exactly how I like it done. The instant I sank my teeth into “Medusa’s Hair”, I was overwhelmed by the richness of the creamy ink pasta & soft, rubbery squid. Both of us looked at each other & started giggling. We quickly took out our mirrors to examine ourselves & cleaned up our stained lips & teeth before we started talking. The food was yummy & both of us loved it. It turned out to be one of the best pastas I've ever had. It’s simply SQUIDALICIOUS!

My only complaint is that no restaurants so far, has the initiative to provide a toothbrush kit. Unlike eating hairy crabs, where some restaurants actually provide you with toothpaste to clean your hands to get rid of the musty smell.

There again, it's not so bad. Through the years, I've somehow mastered the art of eating this infamous dish. I would usually scoop a small amount, just the right size for my mouth & chew it using the molars instead & wipe my mouth from time to time. Try to get your partner to eat it together with you so you won't be so conscious. It's fun!

So, those who haven’t tried Medusa’s Hair, why not try it this Valentine’s Day? Just don’t use it as a weapon like Perseus did. It’s so tragic. But, I certainly wouldn’t recommend this dish if you’re on a first date. Have fun, go ahead & laugh at each other!!

HAPPY VALENTINE’S DAY!

Da Paolo Il Giardino, 501 Bukit Timah Road, #01-05 Cluny Court. Tel: (65) 6463 9628
