These pretty salsa were part of our 5-Course Christmas Menu last year where two of my ex-colleagues came over for lunch. What we had:
  • Mango and Mint Soda
  • Prawn Cocktail Salsa with Caviar
  • Seafood Soup with Garlic Bread - Crayfish, Mussels, Clams, Fish
  • Spaghetti Aglio Olio with Baby Spinach and Honey Baked Ham
  • Mango Pudding with Strawberry Rose
  • Hazelnut Log Cake with Flower Tea

With Christmas just weeks away, don’t you think it is a wonderful way to celebrate with these highly-prized gourmet Black Pearls? Not a good cook? Don’t worry, these are so easy to make; even your kids can do it! Let’s get going!

Ingredients:
6 Large Prawns
6 Big Tomatoes
3 tsp Caviar
3 tsp Corn Kernels
1 Lime
1 stalk Spring Onion ( shredded )
3 drops of Tabasco
2 sprigs English Parsley

Method:
  • Prepare the prawns. Cook them, and then put into ice water so that they stay succulent. Dice 3 prawns and set aside the other 3 for presentation.

  • Rinse 3 tomatoes and cook them till soft. Remove skin and mash them up. Set side.

  • Rinse the other 3 tomatoes and chop off the top to make tomato cups. Cut off 1 ring from each tomato and dice. Put them into a container. Remove the insides and add to diced tomatoes. Add tobacco and lime juice.

  • Add diced prawns and corn kernels into salsa and mix well.

  • Stir in the mashed tomatoes and shredded spring onion. Mix well and spoon into the tomato cups. Top with caviar.

  • Place each tomato cup onto serving plate. Insert a prawn, then top with caviar and parsley. Serve your Christmas Prawn Cocktail Salsa with Caviar chilled!
