Fragrant Thai Lemongrass Soup with Fish ( 美味泰式香茅鱼汤 )

Lemongrass ( 香茅 ) is certainly one of my favourite herbs due to its scent and the many medicinal benefits. I burn lemongrass essential oil for relaxation, I use lemongrass oil for my massage, and I also like adding the herb to make Lemongrass Tea and soups like this Fragrant Thai Lemongrass Soup with Fish ( 美味泰式香茅鱼汤 ).

This is a relatively easy recipe where you will get nice tender fish fillet with a sourish tang. Simply adjust the dish according to your taste and the seafood you have on hand. The recipe is also great for those who can't take the spicy Tom Yum Soup, so this dish is a wonderful alternative. Come, let’s try cooking this refreshing soup!

( Serves 4 )
Ingredients:
150g Fish Fillet
5 Oyster Mushrooms
2 stalks of Lemongrass
1 Garlic Clove ( slightly smashed )
2 slices of Ginger
1 wedge of Thai Lime
1 dozen Cherry Tomatoes
1 tbsp Fish Sauce
1 litre Chicken Stock
1 sprig Parsley ( chopped )
½ tsp Salt

Marinade for Fish:
½ tsp Corn Flour
½ tsp Fish Sauce
Dash of Pepper and Salt

Method:

  • Marinate fish for about 15 minutes.

  • Discard end of lemongrass. Rinse and slice.

  • If you have tea bags or soup bags, put the lemongrass slices inside and add to chicken stock. This way, you won’t have to bite into them while drinking. Boil for about 10 minutes.

  • Throw in tomatoes and continue to simmer for another 10 minutes.

  • Rinse and cut up mushrooms, and add into soup together with ginger.

  • Lastly, add in fish fillet and cook till opaque. Add seasonings and stir well.

  • Turn off heat. Squeeze in lime, and throw in the lime wedge for extra fragrance. Top with parsley and serve your Fragrant Thai Lemongrass Soup with Fish ( 美味泰式香茅鱼汤 ) piping hot.

  2. The soup looks so delicious with the oyster mushrooms. Must use good fish fillet and not those frozen dory fish fillets or else the soup will not taste good. What type of fish fillet do you use?

    1. You can use any fish fillet. Sometimes I use Halibut, Red Snapper, or even Toman Fish. I'm using Dory in this recipe & it tastes just as good. The sourish zest will get rid of any fishy taste, so it's ok to use dory here. xoxo

  8. Never had lemongrass soup with fish in it. We went to a Thai restaurant once and the waitress was shocked that my daughter ate the lemongrass soup at 8 month old.

    1. I guess you must be referring to the spicy Tom Yum soup. I’m surprised too if it’s spicy especially for a Caucasian of such young age. Bet you had a great feast there! xoxo
