Carrot Potage with Prosciutto-Wrapped Breadsticks Recipe

Carrots are rich in beta-carotene which is known to protect our lungs against toxins that are linked to lung cancer. Carrots are also known to promote good eye-sight, but how do you know that these orangey root vegetables are good for your eyesight? Well, have you ever seen a rabbit with glasses? LOL!

This homemade hearty Carrot Potage simmered in a chicken stock is sweet, creamy and extremely nutritious. Turn this comfort soup into a classy dish by pairing it with Prosciutto-Wrapped Breadsticks. You will find Grissinis aka Breadsticks in almost every restaurant in Italy, and they make great appetizers especially with the Italian dry-cured ham.

( Serves 3 )
Ingredients:
3 Carrots
4 Potatoes
6 Garlic Cloves
1 Dried Bay Leaf
1 Small Onion
4 cups Chicken Stock
1 sprig Thyme
1 tsp Salt
1 tbsp Butter
1 tbsp Extra Virgin Olive Oil
½ cup Water
3 Grissini / Breadsticks
3 slices Parma Ham

Method:
  • Prepare garlic, onions, thyme leaves, and bay leaves. Set aside.
  • Prepare carrots and potatoes by removing skin and steaming the vegetables.
  • Add vegetables and water into blender. Blend well.
  • Heat oil and butter, and sauté garlic and onion till fragrant.
  • Add garlic and onion into blender and continue to blend.
  • Transfer to pot. Add chicken stock, bay leaf, thyme leaves and salt. Stir well and simmer for about 15 minutes.
  • Wrap a slice of parma ham around each grissini. Serve your Carrot Potage piping hot with these Prosciutto-Wrapped Breadsticks.

The delicious potage was served with Stuffed Chicken Breast with Parma Ham as our main course.
