Cafedirect Smooth Roast Coffee: Easy Chicken Lollipop Recipe

Looking for a simple way to add oomph to a favourite homecooked dish? This recipe is just what you need! Served like a lollipop and using freshly brewed coffee in a savoury chicken recipe, this dish is guaranteed to bring an element of fun whatever the occasion.

Preparation Time: 2 hrs for marination; 15 mins to cook
Cooking Time: 20 mins
Serves: 8 Chicken Lollipops
For best results, use Cafédirect Smooth Roast Coffee

Ingredients:
( To Marinate )
300gm (4 pcs) Chicken wings
1 tbsp Cafédirect Smooth Roast Coffee
1 tsp Oyster sauce
1 tbsp Corn starch
1 tsp Sesame oil

( For Sauce )
1 tbsp Vegetable oil
10 gm Garlic
20 gm Shallot
5 gm Ginger
1 cup Freshly brewed Cafédirect Smooth Roast Coffee
3 tbsp Mirin
1 tbsp Oyster sauce
½ tsp Dark soy sauce
½ tsp Black pepper powder
¼ tsp Smooth Roast coffee grounds
1 tbsp Spring onion (sliced)

Method:
  • Separate chicken wings at the two joints (not using the tip of the wings) and scrape the flesh along the bone towards the top of each joint and shape into a lollipop.
  • In a bowl marinade the chicken lollipop with coffee powder, oyster sauce, corn flour and sesame oil. Mix well to coat all over the chicken. Cover and place it in the refrigerator for 2hrs.
  • Preheat the oven to 160°C. Bake the chicken lollipops for about 15mins.
  • For the sauce: In a wok pour the oil over medium-high fire, add garlic, ginger and shallot. Sauté till light golden brown.
  • Add the mirin and stir to evaporate the alcohol.
  • Add the brewed coffee, oyster sauce, dark sauce and black pepper and cook till the sauce thickens to a sticky consistency.
  • Add the baked chicken lollipops into the sauce and toss to coat evenly.
  • Transfer the chicken lollipops onto the serving plate and sprinkle with spring onion.
Cooking Tips / Notes
  1. Cashew nuts can be added for extra crunch
  2. Capsicums can also be diced and added to the wok
  3. Ratio for brewing coffee is 1:5 ( coffee : water ) by volume

    1. I guess that because dark soy sauce is added. You can try omitting it for a lighter shade. I reckon the taste would be bitter sweet. xoxo
