Stir-Fried Baby Abalones with Assorted Vegetables ( 花開富貴鲍鱼仔 )

Hey foodies, we posted a “poor man’s abalone” recipe few days back and this time, we are back with a colourful gourmet dish for this Lunar New Year ~ Stir-Fried Baby Abalones with Assorted Vegetables ( 花開富貴鲍鱼仔 )!

Filled with lots of healthy vegetables such as Baby Bok Choy aka Nai Bai Vegetables ( 奶白菜 ), Carrots ( 萝卜 ), Black Fungus ( 黑木耳 ), King Oyster Mushrooms ( 杏鮑菇 ), Fresh Lily Bulbs ( 鲜百合 ), Ginkgo Nuts ( 白果 ), and of course taking center stage is the lavish Baby Abalones ( 鲍鱼仔 ) from Fortune Brand ( 财神牌 ).

It is not every day that you can find Fresh Lily Bulbs in the local supermarkets, but these fresh herbs have grown to be more popular in recent years. In Chinese TCM, Fresh Lily Bulbs are known for soothing our heart and lungs. Added into your cooking, the nutritious herb gives the dish a nice crunch but do not overcook or they will turn soggy.

With the addition of Baby Abalones, the multi-coloured dish is just perfect for the coming festive occasion. Come, let’s serve up a feast!

Ingredients:
1 canned Baby Abalones
150g Nai Bai or Baby Bok Choy
100g King Oyster Mushrooms
1 – 2 Fresh Lily Bulbs
1 Carrot
1 dozen Ginkgo Nuts
½ canned Abalone Broth
1 tsp Oyster Sauce
1 tsp Chinese Cooking Wine / Shaoxing Hua Diao Wine ( 紹興花雕酒 )
1 tsp Sesame Oil
1 tsp minced Ginger
1 tsp minced Garlic
2 tsp Cornstarch
1 tbsp Camelina Oil or Olive Oil


Method:

  • Rinse black fungus. Place in hot water and soak till soft.

  • Discard outer leaves of fresh lily bulb. Cut off the base. Rinse and peel off the petals. Set aside.

  • Rinse and slice the oyster mushrooms.

  • Chop off base of stems, and cut nai bai into halves vertically. Rinse thoroughly.
  • Remove carrot skin. Rinse and cut into slices or flower shapes.

  • Heat oil and saute garlic till fragrant. Throw in carrots, ginkgo, fungus, and lily petals. Add ginger and mix well. If you prefer more crunch, you can also add lily petals last but remember not to overcook.

  • Throw in mushrooms and veggies, and stir fry for couple of minutes. Remove and start plating.

  • Add baby abalones and broth into wok. Cover and simmer for couple of minutes. Add cornstarch to thicken the sauce, and turn off heat.
