Delicious Prawn and Spinach Filo Cups with Foie Gras Recipe

These are probably some of the easiest treats to make; the only hard work involved is layering the filo sheets which can be a pain. You just need patience, but I can assure you it is definitely worth the effort.

I made some Filo Rolls for our last Christmas Dinner, and they turned out surprisingly good and my family could not get enough. So I decided to use the leftover filo sheets which can be refrozen to make these Delicious Prawn and Spinach Filo Cups with Foie Gras.

I found the The Fillo Factory Whole Wheat Filo Dough going at a discounted price in Cold Storage supermarket, so I bought them just to try. I love filo pastries, but this is the first time I am trying the whole wheat type. Can you see all those dots on the pastries compared to the normal ones which are evenly coloured without any dots? If you prefer a healthier version, I guess Whole Wheat would be a better choice since it is organic and vegan.

( Makes 6 Filo Cups )
Ingredients:
24 Square Filo sheets ( size according to your muffin tray )
6 Medium Prawns ( Shelled and deveined )
50g Spinach
50g Philadelphia Cheese
2 tbsp Bacon Bits
3 tbsp Golden Goose Liver Pate
1 tsp Minced Garlic
½ Beaten Egg
1 tbsp Camelina Oil or Olive Oil for frying
3 tbsp Melted Butter
A handful of Wild Rocket for plating
1 tbsp salad dressing to drizzle on Rocket leaves
Salt and pepper to taste

Method:

  • Preheat oven to 180°C. Meanwhile, cut filo sheets into sizes big enough to fit your muffin tray. Place 1 sheet on a chopping board, then brush with butter. Place another sheet diagonally as per image shown to get a nice flower shape. Do the same until you stack up about 4 layers. * You need to cover the unused sheets with a damp cloth so that they do not dry up easily.

  • Grease muffin tray. Place the filo stacks onto the tray one by one.

  • Bake in oven for about 5 minutes or until golden brown depending on your oven type. When done, remove gently from muffin tray and turn them upside down to bake the other side for another 3 minutes or so. * This step is optional unless you prefer them to be crispy both inside out.

  • Remove filo shells from muffin tray, and place them on cooling rack. Look how beautifully the filo shells turned out!

  • Clean prawns and spinach, and set aside. Mix them with Philadelphia Cheese and egg. Heat oil and saute bacon till fragrant. Add garlic, then throw in the prawn and spinach mixture. Fry till prawns turned pink. Drain and transfer to a bowl.

  • Spoon the mixture into filo shells. If you want to retain the crispiness of the filo shells, then drain off excess sauce.

  • Line serving tray with rocket leaves and drizzle salad dressing. Place your Delicious Prawn and Spinach Filo Cups with Foie Gras neatly and serve them immediately.

  1. Look really yummy! From afar, i thought the filo sheet look similar to the chinese beancurd skin...lol...but it's definitely not...1st time coming across Filo pie...look real delicious!

  4. I'd love some prawns but not foie gras. It's fattened liver of goose or duck right? They force feed the duck or goose with corn through a tube or pipe. And when the liver's fat enough...sorry didn't mean to be graphic. I just feel sorry for animals.

  10. I'm not allowed to eat whole grain so I will try these with regular pasty.You always have the best recipes. These cups do look delicious, I can't wait to try them out. I will need to alter the recipe a bit, I think I will use tuna instead of prawns. Fantastic recipe & tutorial!
