( Makes 6 Toasts )
Ingredients:
200g Spinach
1 small Tomato ( diced )
½ Baguette ( sliced )
2 tbsp Silver Fish ( optional )
100ml Emborg Cooking Cream

Method:
- Cut off roots from spinach and chop into 3 equal parts. Rinse thoroughly.
- Rinse lemon. Using a zester, make about 1 tbsp of lemon zest.
- Rinse silver fish. Heat oil and fry till crispy. Drain and set aside. * You can fry extra and keep them in an air-tight container for other use.
- Sauté garlic till fragrant. Throw in spinach and seasonings and fry till vegetables turned soft and dark green. Remove.
- Heat cooking cream with tomatoes and lemon zest.
- When sauce is bubbling, add vegetables and mix well. Turn off heat and let it cool.
- Butter your baguette and toast them in the oven.
- Place your vegetables on the crunchy toast and you are done.
- Top with Crispy Silver Fish for best result, and your Creamy Spinach in Camelina Oil with Crispy Baits on Toast is ready!
