These breakfast treats are a great hit on the internet with countless of food shots surfacing online. Mainly consisting of Baked Sunny-Side Up Egg recipes on the net, I made my own version using Scrambled Eggs and topped with Bacon Bits and Mozzarella Cheese instead.
#Avocado is prized for its high nutrient, and eating this fruit can help lower your cholesterol and triglyceride levels. In this recipe, you can have your baked eggs plain with Avocado, but I suggest you add Bacon Bits as these give the dish a savoury kick.
Ingredients:
2 Avocados
1 Medium Egg
2 tsp Bacon Bits
1 tbsp Mozzarella Cheese
Pinch of Herbs ( your preference )
Extra Virgin Olive Oil for Greasing
Dash of Salt and Pepper

Method:
- Preheat oven at 200°C. Meanwhile, prepare avocados.
- Beat egg with salt and pepper, or simply crack an egg into the hole if you prefer to have it sunny-side up.
- Grease avocados with olive oil, and pour beaten egg into holes. Top with bacon bits.
- Sprinkle mozzarella cheese over avocados.
- Place them in oven and bake for about 10 minutes depending on avocado size, or how well you like your eggs to be done.
- Sprinkle your favourite dried herbs like parsley for added scent. Enjoy your Healthy Baked Eggs in Avocado with Bacon!

Enticing! But this is the 1st time I saw such a picture although I have seen other bake egg recipe, but no on avocado.

ReplyDeletewhat a great idea! It would never occur to me to try baking avokado with mozzarela and bacon, but I bet it tastes really nice. Avocado has a meaty interior, so I think it works well in salty combinations. I'm looking forward to trying this, you have certainly inspired me.

Just saw a clip on bacon-wrapped avocado last night. That looks delicious but now looking at this, yours even more tempting.
