CNY Fortune Stir-fry Chicken with Ginkgo Nuts ( 发财鸡炒白果 )

Do you know that Ginkgo Nut (白果 ) is a traditional Chinese herb that is known to combat coughs and ageing?  It is also a superb herbal supplement and anti-oxidant, and that is why I love adding these healthy nuts occasionally to my cooking.

Ginkgo nuts are popularly used in congee, and are often served at special occasions such as the Chinese New Year as part of the vegetarian dish called Buddha's Delight. Hence, the Fortune Stir-fry Chicken with Ginkgo Nuts ( 发财鸡炒白果 ) formed my Chinese New Year 8-Course Festive Dinner with friends last year.

This dish can be part of your casual home-cooked meal, but when plated with some colours, the simple chicken meal is instantly transformed into a classy dish fit for a festive occasion like the Lunar New Year.

2 Chicken Breasts
150g Sweet Peas
1 Orange
1 tbsp Ginkgo Nuts
¼ Red Bell Peppers aka Capsicums
1 tsp Minced Garlic
½ tsp Minced Ginger
½ Small Onion
1 tsp Oyster Sauce
1 tsp Chinese Cooking Wine
2 tsp Sesame Oil
2 tbsp Olive Oil

Marinade for Chicken:
½ Egg-white
1 tsp Oyster Sauce
1 tsp Minced Ginger
Pinch of Salt
Dash of Fish Sauce

  • Rinse chicken and dice into cubes, and marinate for about an hour.

  • Clean vegetables and cut into small pieces.

  • Remove " veins " from the peas and rinse thoroughly.
  • Cut orange into slices and place onto serving plate neatly.

  • Heat 1 tbsp of oil and stir fry ginger with sweet peas till the veggies turn bright green. Transfer to plate with orange slices.

  • Heat another tbsp of oil and sauté garlic and onion till fragrant.

  • Add chicken, capsicums, ginkgo nuts, sesame oil and oyster sauce. Mix well and stir fry for about 4 - 5 minutes, adding wine last. Do not cook chicken for too long or they will turn tough.

  • Dish out your chicken onto the serving plate and serve your succulent Fortune Stir-fry Chicken with Ginkgo Nuts ( 发财鸡炒白果 )!

  6. I heard about Ginkgo nuts. I think that there are many medical products (pills etc) that are based on it and many of them are available in our pharmacies. However, I never used Ginkgo in cooking.

    I've heard of Buddha's Delight but I've always thought it was a vegetarian dish. I can't say I've tried it before coz none of my relatives are vegetarian and don't have the custom of eating vegetarian during CNY.

    1. You're absolutely right, Hua Bin. Luohan zhai is a vegetarian dish. I was referring to just the ginkgo nuts being served in the dish, not chicken at all. Hope this clarifies ^_^

      Interesting, I guess I don't have much exposure to ginko nuts. I've had it before and I like it but only (relatively) upscale restaurants would serve a dish with ginko nuts. It's quite expensive. I'll love to eat your dish, made me really hungry. :)
