Mom’s Spinach Soup With Anchovies

Remember the days when you were sick & mom used to cook you nice nutritious soups? Well, this is one of my mom’s specialties & it has now become my family’s top-of-the-list soup. It is simple, healthy & easy in just few steps but packs a punch!

Anchovies are a good source of Calcium & are often used for making fish stock. The Anchovies makes this clear Spinach Soup a mouth-watering mommy's dish.

Here's what you need:
500g round Spinach
50g dried Anchovies
1 bulb Garlic
1.5 lit Water
1 tsp Salt
½ tsp Sesame oil
1 tbsp Cooking oil
Pepper to taste

  1. Lightly smash the peeled garlic to let out the flavour when frying.
  2. Heat oil & sautéed garlic till fragrant. Drain & throw the garlic into a pot of boiling water.
  3. Rinse anchovies. Using the oil from garlic, fry the anchovies till you can smell the aroma. Be careful not to burn it. Add into pot, together with the scented oil. Cover & simmer for 30 mins.
  4. Cut off spinach roots. Separate stalks & leaves, & rinse thoroughly to remove any sand residue. Add stalk to soup & continue to simmer for 20 mins.
  5. Finally, throw in the leaves & simmer for another 5 mins. Add seasonings & serve piping hot. * Don’t worry about the veg turning brown as it’s important for the stalk to be really soft so it melts in your mouth :)

  1. oh yes! mum cooks this for me too... missing home now.

  2. This is quite the soup. I've never tried making soup with anchovies before. I think these are another type of food where either you'll hate it or love it, much like my beloved durian. Haha. Thanks for sharing your Mom's recipe with us, Shirley.

  3. I love this soup! The anchovies give it such a nice warm flavour to the broth :)

  4. My fav Shirley, make this as its really simple and tasty.

  5. Oh, I remember this...very delicious! It's so good with rice. I don't need anything else :D

  6. I love this soup! Sometimes my mom uses dried shrimps. The spinach we have here is different from the ones found on your side. The ones here are more like po choy.

  7. Thank u ladies, for all your comments! Looks like the smell is drawing all the good-old-memories.........

  8. Don't you just love mom recipes?

    1. Susan, that's a brilliant idea! Sometimes, we add crispy anchovies on top to add some crunch to the soup & it's real tasty!

  12. Is it one clove of garlic or a whole bulb? Cos Ur pics show a whole bulb but ur recipe calls for one clove.

    1. Oops, it's one bulb. Thanks for the correction, I've corrected the typo! Hope you'll like this soup as much, Michelle. xoxo

  13. Is it 1 clove of garlic or a whole bulb? Cos Ur pictures versus ur written recipe seems to differ.

    1. Michelle, I've already replied you earlier as above; it's one bulb. Thanks for pointing out! xoxo
