Prosperity Pork with Pine Nuts (发财肉, 丰收连年)

This dish is one of our usual home-made meals, either taken with porridge or rice. Only difference this time: I’d added pine nuts and cut up some red and green Capsicums (bell peppers) to make flowers/leaves for decoration since it was for my Chinese New Year Reunion Dinner, and gave it a nice name to impress my guests.

1 red Capsicum (flowers)
1 green Capsicum (leaves)
250g minced Pork
2 tsp Pine nuts
2 tsp Black bean paste
1 tsp minced Ginger
½ tsp minced Garlic
1 tsp Sesame oil
1 tsp Chinese wine
½ tsp Corn flour
1 tbsp Cooking oil
Pepper to taste

  1. Marinate pork with bean paste, pepper and flour for an hour. Set aside.

  3. Wash Capsicums and remove seeds. Make flower and leaf patterns using moulds. Dice the remaining bell peppers.

  5. Heat oil and sauteed garlic and ginger. Add pork and stir-fry for about 3 mins. Put in diced Capsicums and half of Pine nuts, sesame oil, wine and continue cooking for another 2 mins.

  7. Dish pork into bowl and press hard. Overturn pork onto plate and top with remaining nuts. Decorate with flowers and leaves and you’re ready to impress your guests!
