Bitter Gourd has long been used in India as a folk remedy for diabetes. The vegetable is excellent for health & it’s known for helping to lower high blood pressure & regulate blood sugar levels.

Bitter Gourd is not well-liked by many but I would say it’s an acquired taste. I used to dislike the raw & bitter taste until I stumbled upon a Bittergourd Chicken dish more than 10 years ago. I tried cooking it & I’ve never regretted since; it has become an all-time favourite in my family. Try cooking my version of bitter gourd, which is soft & melts in your mouth. You’ll soon fall in love with eating this vegetable too.

2 Bitter Gourds
1 Chicken (cut into small pieces)
2 tbs of brown bean paste
1 tsp black sauce
1 tsp minced garlic
2 cups of water

(For marinating chicken)
1 tsp corn flour
1 tsp Chinese cooking wine
1 tsp sesame oil
1 tsp black sauce
1 tbsp oyster sauce
1 tsp cooking oil
Pinch of salt & pepper
  • Marinate chicken & set aside for about an hour. Meanwhile, prepare bittergourd for use.

  • Remove skin & cut bittergourd in half.

  • Discard the seeds & core.

  • Cut it in thick slices. To reduce the bitterness, soak it in salt water for an hour & drain.
  • Stir-fry marinated chicken pieces with garlic till half-cooked.
  • Add bittergourd, bean paste, black sauce & water. Cover & simmer dish for an hour or till bittergourd turns soft.

    It will surely make a good dinner entry for my mum and mil who both need to watch their sugar and blood pressure levels.

    If not wrong, my mil did try this with black bean paste in place of soya bean paste

  5. Amy, bittergourd adds great nutritional value to a meal & it's especially tasty when cooked till soft.

    You can also cook it with black bean paste instead. I'd normally use black bean when cooking with pork ribs or fish. Perfect combination!

  6. Congratulations Shirley! I definitely agree with you that bittergourd takes some getting used to. As a child, I used to hate bittergourd. As I grew up, I started to like it. Then I went and married someone who hated it and now I'm back to square one. Haha. Your dish looks and sounds wonderful. I'd love to have some right now with rice or even by itself.
