Using one of my favourite health tonics, the BRAND'S Essence of Chicken ( 白蘭氏雞精 ), to come up with a recipe is really a no-brainer job since I have been drinking the essence from young. For those not familiar with the brand, the British-born BRAND'S ( 白蘭氏 ) is one of the leading providers of health, beauty and wellness supplements.

With their recent new product launch, the Essence of Chicken with Cordyceps ( 蟲草雞精 ) is ideal for seniors who want to remain active, and busy professionals who suffer from fatigue, lack of sleep and stress.

In this healthy recipe, there are 3 main ingredients: Succulent Prawns and Limpets, plus a bottle of Essence of Chicken with Cordyceps. Canned Limpets are available in local supermarkets and bountiful especially during the Chinese New Year period. They make great substitutes for the pricey Abalones, but if you are willing to splurge, go ahead and replace Limpets with Abalones instead!

( Serves 4 )
Ingredients:
1 bottle BRAND'S Essence of Chicken with Cordyceps ( 白蘭氏蟲草雞精 )
1.5 cup Rice, rinsed
1 canned Limpets, stock reserved
1 canned Braised Peanuts
1 dozen Medium Prawns, remove shell and vein
1 sprig Spring Onions, chopped
2 slices Ginger, Julienned
1 tsp Salt ( optional )
1 tsp Sesame Oil
2 tsp Samsui Ginger Sauce ( optional )
3 – 4 cups Water

Method:
Step 1
  • Cook using rice cooker: Add the rinsed rice, limpets stock, water and ginger into the rice cooker. Click on “ Porridge ” mode and let it cook.
  • Cooking over stove: Add the rinsed rice, limpets stock, water and ginger into a pot. Cook over high fire, bring the porridge to a boil. Reduce the fire to medium low, let it simmer for 20 mins. Stir occasionally, to prevent the porridge from getting burnt.
Step 2
  • When the porridge is almost cooked, add in seafood and braised peanuts. Cook it again for another 3 – 4 minutes and turn off the heat.
  • Pour in the Essence of Chicken with Cordyceps and mix well. Adjust the amount of Chicken essence to your liking. Dish to serving bowls, garnish with spring onion and ginger. Serve it immediately.
