For me, I just keep a good quality bottle of Extra Virgin Olive Oil and use it with almost everything, except for deep frying.

80g Arugula / Wild Rocket Salad
1 Hard-Boiled Egg
4 tsp Sunflower Seeds
50g Bacon Bits
6 tbsp Extra Virgin Olive Oil
2 tbsp Balsamic Vinegar
Oil for frying bacon
- Peel and chop the eggs.
- Dice the onion.
- Heat oil and fry the bacon till golden brown. Drain and set aside.
- Divide wild rocket leaves into 2 serving plates. Throw in chopped onions and drizzle the olive oil and balsamic vinegar.
- Top with eggs, bacon and sunflower seeds and serve your Rocket Salad with Bacon Bits and Eggs in Extra Virgin Olive Oil and Balsamic Vinegar!
