Benefits of Extra Virgin Olive Oil + Rocket Salad Recipe

Olive oil is rich in various antioxidants, and lowers the levels of cholesterol. I have switched to using Extra Virgin Olive Oil in my cooking for many years now, and if you have been following my recipes, you will know that I usually call for Olive Oil instead of the normal cooking oil.

Well, Extra Virgin is the highest grade of olive oil and naturally the most expensive. Having said that, there are also great differences among extra virgin olive oils in terms of their quality, taste and prices.

If price is a concern, I would suggest keeping a good bottle of Extra Virgin Olive Oil and another less pricey bottle of Olive Oil in the kitchen. It is best to use Extra Virgin Olive Oil uncooked in order to appreciate its flavour. So use the Extra Virgin in salad dressings, as a bread dipper or to drizzle over your seafood, and use the normal Olive Oil for cooking to save cost.

For me, I just keep a good quality bottle of Extra Virgin Olive Oil and use it with almost everything, except for deep frying.

Also, I use Extra Virgin Olive Oil for my pet Shih Tzu. Due to old age, Princess Candy has extremely dry skin. I have tried many methods including giving her health supplements and whatever lotions the pet shop recommended, but nothing works. Then, I read about the wonder of Olive Oil.

For a start, I added Extra Virgin Olive Oil in Candy's diet on a daily basis and also applied the oil on her after each bath, only areas with dry skin. Every since I combined these two methods months ago, her condition improved tremendously. Now, I no longer need to apply the oil on her, but continue with the oral diet. Trust me, just 1 tsp a day and it works miraculously!

Let's get on with this healthy Arugula aka Rocket Salad with Bacon Bits and Eggs, and you can always omit the bacon for an even healthier treat!

( Serves 2 )
80g Arugula / Wild Rocket Salad
1 Hard-Boiled Egg
4 tsp Sunflower Seeds
½ Onion
50g Bacon Bits
6 tbsp Extra Virgin Olive Oil
2 tbsp Balsamic Vinegar
Oil for frying bacon

  • Peel and chop the eggs.

  • Heat oil and fry the bacon till golden brown. Drain and set aside.

  • Divide wild rocket leaves into 2 serving plates. Throw in chopped onions and drizzle the olive oil and balsamic vinegar.

  5. If I have a good olive oil I find I don't need much else as dressing - perhaps a little salt and pepper - but the flavour of the oil is usually enough.

    My Mom doesn't really use extra virgin olive oil because of the taste it carries in our dinner, but what she's done lately is coat the cooked vegetables with the EVOO after the gas is switched off. I actually prefer my salad without any dressing - no oil, no mayonnaise.

  19. Looks delicious! We always have extra virgin olive oil--don't buy anything else. It's cheaper to buy in large quantities, and with a 6 person family, we definitely go through it. Then again, we don't use vegetable oil or anything else, so it goes into everything.
