Fun Food: 3D Jelly Flowers with Lychees ( 水晶荔枝果冻花 )

If you have the time and patience, I think Jelly Art is a good hobby to pick up. These 3D Jellies are so pretty to look at especially if you are bored with plain jellies. Well, it was my mom's 87th birthday, so I decided to make my 2nd attempt at these 3D Jelly Arts again.

Instead of having plain Konnyaku Jelly, I added Lychees in the coconut agar agar base. I wanted to make a rose this time, but it turned out to be something else. Lol!

I also made another jelly art for mom to bring home. I changed the type of blade this time. I thought this piece resembles more of a rose, don't you think so? Anyway, looks like I gotta to work harder.......

( Makes 1 Small Bowl, and 1 Rectangular 6" x 4" Container )
Ingredients:
10g Red Man Konnyaku Jelly Powder
200g Caster Sugar
800 ml Water
150 ml Lychee Syrup
¼ tsp Citric Acid
4 Lychees
Food Colourings

( Coconut Base )
10g Swallow Globe Agar Agar Powder ( White )
14g Red Man Konnyaku Premix Jelly Powder
120g Caster Sugar
500 ml Water
120 ml Lychee Syrup
400 ml Kara Coconut Cream
4 Lychees

Method:
( Top Part )
  • Follow cooking instructions on Konnyaku Jelly Powder to make the top part of jelly.
  • Pour jelly solution into moulds and remove bubbles if any. Refrigerate for about an hour for jelly to set.
( Base )
  • Mix agar agar powder, premix and sugar in pot. Place pot on stove and slowly add water and syrup.
  • Turn off heat when boiling, and stir in coconut cream.
  • To keep the agar agar from turning hard, place the pot in a wok with water and keep it simmering until it is ready for next usage.

  • Cut about 8 lychees into bite size piece and set aside. Keep the rest for presentation.
( Flowers )
  • Scoop out some coconut mixture into a bowl, and add few drops of red colouring. Place the bowl in hot water to prevent it from hardening.
  • Remove 1 konnyaku jelly from fridge. Make a small dent in the middle and start injecting the red colour to form the flower pattern. When done, put back into fridge and take out the other jelly and do the same.

  • These are the different blades I used for the two flowers.

  • When this is finished, prepare another bowl of coconut mixture and add green colour to make the leaves. Do the same for the other jelly.
  • When you are satisfied with your patterns, scoop away excess colourings and use a fork to poke some holes on the jelly or scratch it gently. As mentioned in my old post, this is to prevent the two jellies from separating when cut. You can see how I do it in my previous Mahjong Agar Agar Cake Recipe.

  • Next, pour a thin layer of coconut mixture just enough to cover the 2 jellies. Refrigerate till set, then throw in the diced lychees. You can now turn off the heat from the stove and pour the rest of the coconut mixture to cover the lychees.

  • Refrigerate till set and serve your 3D Jelly Art chilled! Optional: I have also added a purple colouring base to the 2nd jelly to make it more colourful.

  3. Wow! That's beautiful! I've always wondered how they did the 3D part of the 3D jelly. Interesting, so it's food grade syringes injecting the jelly into the middle part. Happy birthday to your mom Shirley! :)

  4. It is not easy to make the 3D jelly in the jelly. I watched a Youtube before on this 3D art.

    The first one looked like lotus flower. the 2nd one did resemble a rose. Anyhow I am sure your mum is happy to receive and enjoy this beautiful jelly from you.

Looks like this is the latest trend in food art - everyone seems to be so into this 3D jelly art - I find it really amazing and was wondering how could injecting the colors turn the jelly into an art piece - thanks for this post and showing very clearly how exactly the instrument use to inject the color looks like. I think I prefer to admire then to hands on myself - my patience is short length -hahaha...looking forward to more art pieces from you....

  16. You know yesterday was the first time I tried lychees? I was in an Asian restorant with my husband and after dinner I wanted a sweet desert....so I choose lychees..and they were so good. I like they are not too sweet, they really are a lovely fruit.

    your 3D cake is absolutely beautiful. You're getting the hang of this 3 D jelly flowers...is there anything you can't do?

    So sweet of you to prepare this for your mother's birthday. I'm sure she was very happy to have a cake her daughter made for her. Preparing food for those we love is a special pleasure, isn't it?
