PurelyFresh Seafood In Parcel Brings You Holiday Cheer!

A popular culinary herb, Thyme has one of the highest antioxidant levels and packed with minerals and vitamins that are known to have healing properties. Seafood Parcels are great when baked with fresh herbs and a drizzle of wine, olive oil or lemon juice. The fresh seafood cooked in its own juices within the parcel gives a nice moist result.

Thyme leaves can be easily removed from stems by pulling through the fingers. If you prefer, you can add more just before serving and give it a stir.

For presentation, serve the parcel as it is and open it at the table in front of your diners releasing the scrumptious aroma. #Christmas is near, this festive seafood dish served with Garlic Toast is truly a delightful treat. Let's get started, shall we?

(Serves 3 - 5)
Ingredients:
9 medium/large Prawns
2 medium Squids
1 Fish Fillet
9 Baby Tomatoes
½ Zucchini
3 Lemon slices
¼ Lemon for juice
2 tbsp Extra Virgin Olive Oil
1 sprig Thyme
½ tsp Parsley Flakes
2 tbsp Philadelphia Cream Cheese
1 tbsp Emborg Whipping Cream
Pinch of Salt and Corn Flour

Method:

  • Rinse lemon and grate to remove the peel. Squeeze the juice and set aside.

  • Remove prawn shells and whiskers; devein. Rinse and set aside.
  • Clean fish fillet and cut into big chunks. Marinate with salt and corn flour.

  • Clean squids and cut into equal parts.

  • In a bowl, mix seafood with whipped cream, olive oil, thyme, parsley flakes, lemon zest and cream cheese.

  • Lay baking tray with parchment paper. Transfer seafood to paper. Clean vegetables and cut zucchini into slices, and tomato into halves. Add in vegetables and top with lemon slices. Wrap parcel.

  • Remove tray from oven. Drizzle lemon juice, sprinkle more thyme leaves for fragrance, and give it a gentle mix.

Great presentation and explanation. Your husband and son are lucky to have such a lovely and accomplished chef at hand. My husband isn't particularly crazy about fish and seafood but I still prepare it at least once or twice a week (and more if he allows it;)....anyhow, at least he gives me the credit and says he never ate better fish than when I prepared it.
