Bejewelled Mango Puree with Chia Seeds Dessert ( 珠光宝气芒果泥 )

Some time ago, I had introduced the Nutiva Organic Chia Seed Black during one of my online shopping at Vitacost. The good thing about the super food is that it has no taste, making it really adaptable for use in both sweet and savoury recipes. Do you know that chia seed swell up to 12 times its weight in liquid within 10 minutes, so you don't actually need to use a lot?

During my last Chinese New Year 8-Course Festive Dinner With Friends, I had prepared some mango desserts and added some chia seeds to them. I also added Nata de Coco, a chewy, translucent jelly-like ingredient often mixed with desserts.

My initial idea was to top my ice-cream dessert with Nata de Coco and Chia Seeds, but changed my mind for a little experiment. I enjoy freezing my fruits, so I threw some Nata de Coco into my cute Mickey Mouse Dessert Bowls, followed by a scoop of ice-cream, and popped the bowls into the freezer.

When it was time to serve my desserts, I poured the mango puree into the bowls and drizzled the chia seeds over it. Everything went well, except that the Nata de Coco did not "melt" as fast and they were as hard as stones. Can you see the white layer of frozen nata de coco at the bottom of the serving bowl? Disappointed, but it was a lesson learnt. Nonetheless, we all enjoyed the Mango Puree Ice-cream except for the little hiccups.

(Serves 6)
Ingredients:
2 Mangoes
1 tbsp Chia Seeds
1 pkt Nata de Coco
6 scoops of Mango ice-cream

Method:

  • Soak chia seeds in water till they turn gluey.

  • De-skin mango, and cut into cubes.

  • Blend the mango together with the liquid from the Nata de Coco.

  • Pour into a container and cover. Refrigerate.

  • Scoop the ice cream into serving bowls. Pour mango puree and top with chia seeds and nata de coco. Serve your Bejewelled Mango Puree with Chia Seeds Dessert ( 珠光宝气芒果泥 ) chilled.

  28. Can imagine that this desert is yummy, and it's good news - I can make it, just saw Chia seeds in an organic shop in Milan!! Would like to try it frozen as well, and as nata de coco isn't available here (at least I think so, unless it has another name..) - no problem :))

  35. I enjoy freezing fruits as well...just recently I made an ice cream from kiwi and banana...and some cereals and yogurt...it was really yummy.

    I will keep in mind that coco doesn't freeze well...thank you for sharing!

    Actually we (colleagues and I) are used to have lunch in a small brasserie (traditional french restaurant). At the end of the lunch, the waiter serves our dessert (fruits salad) in several type of bowls of which one (and only one) is the Mickey Mouse cup ! Eating fruits salad in the Mickey cup became over the years one of the major (joke) award in our team ! ;-) Unfortunately the waitress broke THE cup last week...
    Since we are searching the whole internet to replace it !
