'Gaia', a derivation from 'Gaea' in Ancient Greek, refers to a primal Greek goddess known as Mother of Nature. Managed by Paolo Colzani and Executive Chef Emanuele Faggi, Gaia Ristorante & Bar recently re-opens its doors at the sophisticated Goodwood Park Hotel, Singapore.

Under the hands of Chef Emanuele, who has bagged various competitions such as Silver medal in the 1st Italian Champion and Silver in the 8th Competitive National Fair of Cooking, the endearing allures of Italian cuisine at Gaia shines through with charm.

A tastefully-designed lobby bar greeted us upon our arrival at Gaia Ristorante & Bar, as we were led into the dining room that is divided into different spaces; an inner courtyard dining room decorated to resemble a garden area, and a more intimate inner dining room with plush leather booth seats or elegant and comfortable armchairs.

Consider yourself lucky if you can snag a seat at one of these luxurious leather sofas without prior reservations as they proved to be extremely popular. Sadly, we were in no luck as the restaurant was running full and these seats were all reserved.

For diners with prefer a personal space or for their corporate dining, the Private Room in a ubiquitous glass-enclosed wine cellar which snugly sits 10 guests, is one not to be missed.

With a family background of F&B, Paolo Colzani (General Manager of Gaia) has worked with many top restaurants in Singapore such as Les Amis, Prego, Iggy’s and Garibaldi, before he went on to co-found Burlamacco Ristorante with his extensive knowledge of fine dining and more.

With both Paolo and Chef Emanuele, my family were certainly in good hands, with Gaia's contemporary Italian menu featuring Emanuele's creations to entice the most audacious palate. This plate of colourful vegetable chips were already a flamboyant start reflecting the chef's personality.

Good food and wine go hand in hand, but not that evening. My family appreciates the freshly-squeezed juices at Gaia since we were still on medication due to the flu bug that hit us a week ago, hence no wines for us.

Our Degustazione Tasting Menu (SGD 98++/pax, with wine SGD 188++/pax) kicked off with some delicate Amuse Bosche - Caramelized Fig with Avruga Caviar, Watermelon with Squid Ink Powder, Parmesan Bisquit with Balsamic Vinegar and Spices. The subtle sweetness from the fruits combined beautifully with the exquisite ingredients, and my boy particularly enjoyed the cheesy biscotti with a sourish tinge.

Next, we were hit by shades of bright red with the Gamberi Rossi, Ricotta, Origano. I've tried these Sicilian Red Prawns on quite a few occasions, and I adore their melting texture and creamy taste. These Gambero Rosso are a rare treat, and Italian gourmets rate these red prawns above all other shellfish. Paired with rich and buttery ricotta cheese on basil olive oil and oregano, the raw Sicilian prawns are the best kept secret!

The Fried Egg Yolk is best eaten warm, as suggested by Paolo. Although the yolk was a little dry inside, the creamy and savoury seasonal braised asparagus made the Uova, Asparagi incredibly tasty.

As the saying goes, a bowl of delicious soup heals the soul of the ill. Whenever I'm indispose or recovering from a flu, soups always make me feel satisfied. Hubby had Gaia's ala carte order of Minestrone (SGD 14), while my son and I opted for potage each. While most Minestrone soups are thick and rich, Gaia's version was a clear soup flavoured with a colourful mix of seasonal vegetables.

Both Jon and I were extremely pleased with our choice of Patate, Tartufo Nero @ SGD 14, which is certainly one of the best in town. Not just because of those black flakes floating on the rich and creamy potage, but they certainly added a touch of luxe to the potato puree. Yum-yum!

Double filled ravioli with Parma Ham and Parmesan, the duo pasta is a quirky dish that tastes as good as it looks.

Velvety and redolent, the pretty Parmigiano, Prosciutto Crudo, Balsamico ensemble is wonderfully unified on the tongue with the aged balsamic reduction and white balsamic foam. The ravioli with ham and cheese complements each other, producing an explosion of taste. Love it!

Diners for Degustazione Menu will get a choice of either a fish or the veal. Our fish for the evening was an Oven-baked Monkfish. The Rana Pescatrice is not your typical fish dish; the seafood is breaded and baked till perfection. It's chewy in texture, and most importantly not fishy at all. Accompanied with roasted potato and braised fennel, the light ginger butter sauce provided a tangy backdrop for the Monkfish.

My family had the privilege of having Paolo cutting up and serving us the Vitello, Midollo, Nocciole. It was Italian fine dining at its peak!

The tender veal, coupled with Bone Marrow Hazelnut and some monstrous sautéed White Sanctity Mushrooms (白灵菇), were a magical combination. The mushroom is a kind of rare fungi; texture is smooth, tender and sweet, and tastes like abalone mushrooms. While hubby and I enjoyed our exotic fungi, Jon didn't quite appreciate as the taste of these mushrooms can be quite bitter for a teenager to accept.

That evening, our family got an attractive pre-dessert treat, a Chocolate Croquette with Olive Oil Caviar. While the crispy bite proved to be real chocolaty and crunchy, we found it to be too oily. The Olive Oil Caviar looks good as an embellishment, but was simply too overwhelming for us.

Our dinner hit a high and ended with a sweet note with Gaia's Ananas - Caramello - Ciocclato Tartufu Nero.  The word "Tartufo" means "Truffle" in Italian. "Tartufo" may also translate to a type of edible fungus, but it's also known as an ice cream dessert. The distinctive blend of Roasted Pineapple in Caramel sauce and Chocolate Ice-cream with Norcia Black Truffles played a symphonic umami. Truffles in a dessert, anyone??

Mirror, mirror, on the wall. Who's the prettiest of them all? Enormous vanity mirrors were spotted in the chic restaurant. Time for selfie? Guests visiting Gaia's restrooms will find one of these just outside the rooms. I was really surprised to see such a huge mirror standing in front of me. Be sure to check that out!

Well, to celebrate the re-opening of Gaia Ristorante & Bar, dinners will be able to enjoy their Degustazione Menu at just SGD 68++ till 31st May 2014! Isn't it such a steal? If you still haven't had plans for this Mother's Day, why not try your luck to see if you can secure a seat at Gaia?
