BRAND'S® Essence Of Chicken Mushroom “Risotto” With Truffle Oil Recipe

It is said that a single serving of BRAND’S® Essence of Chicken helps reduce stress levels & contributes to a relaxed mood. At the same time, it increases mental concentration & improves short-term memory.

During a recent food-tasting session at #OSORistorante, I fell in love with their Black Truffle “Tartufo” Risotto. The risotto was one of the best I’ve ever tasted! Being a huge fan of the luxurious truffle, I decided to recreate this dish by making an Asian version & replacing #truffles with mushrooms & truffle oil instead. Crazy ideas soon formed, & I thought adding BRAND’S® Essence of Chicken into the rice may just work since it has a hint of deep bitter taste. I happened to have a bag of Japanese rice, which shares some similarities since short- grain rice is usually used to make risotto.

Guess what? The BRAND'S® Essence Of Chicken Mushroom “Risotto” With Truffle Oil turned out beautifully scented & delightful! I made the Japanese rice using a rice-cooker instead of a tedious process of cooking risotto using a pan to stir continuously. If you like rice with some resistance or bite, Al Dente style, you’ll enjoy this classy & nutritious dish. Since it was my first attempt & wasn’t very sure if it would work, I only cooked a small portion two :< Now, I can’t wait to share my recipe with everyone here! So how about savouring a 5-star gourmet dish using BRAND’S® Essence of Chicken?

(Serves 2)
Ingredients:
1 Bottle BRAND’S® Essence of Chicken
½ cup Japanese short-grain rice
60g Shitake Mushroom
100ml Chicken Broth
½ Small Onion
½ tsp minced Garlic
½ tbsp Extra-virgin Olive Oil
½ tsp Pan Salt

Method:

  • Separate shitake stem from body, & gently scrap off the outer layer from stem. Rinse.

  • Dice shitake & blend well. It’s ok to leave some small bites.

  • Remove skin from onion & wash thoroughly. Dice.

  • Heat oil & sautéed onions. Add garlic half-way through & sautéed till fragrant but not brown.

  • Rinse rice & soak for at least 30 mins for it to absorb the water. Drain well. Add salt, ingredients, & pour broth & chicken essence into rice & cook. Make sure you stir when it’s half-way through.

You can even add some crispy garlic for some crunch. If you prefer a creamier version, you can even add more stock to your rice & stir in some shredded parmesan cheese!

  4. Interesting recipe. I have some BRAND'S hampers. I dont usually drink like that bcos of the smell and taste but I wouldnt mind throw a bottle into chicken soup. This recipe is a must try. Thanks for sharing

  6. I drink my chicken of essence early in the morning empty stomach... my mom told me to warm it up on a hot bowl... but being lazy, i just drink it from the bottle! :)

    1. Ken, you gotta try it to know! As explained above, the chicken essence has a hint of deep bitter taste that could blend well with the earthy taste of mushrooms & truffle oil. It turned out to be a perfect marriage!

    1. Shirlyn, I got it during one of my trips to Australia. I like the scent, so got another friend to buy for me. Truffle oil is becoming very popular here recently, even Cold Storage sells it. The prices range from just $20 to $200, depending on whether they contain real truffles or not.

  18. I am a fan of chicken essence! The ultimate "secret weapon" for exam lol. Cant take in too much because is very "heaty".

  19. This is really interesting! Adding chicken essence into rice to cook. Sound like adding marmite into the baby porridge which I've never tried but seems like many toddlers loves it and so we adult should go for this version instead - chicken essence in rice. Haha! Oh, yes, besides boosting the energy level, Brands Essence of chicken do increase levels of stress tolerance - it has been proven in my family.

    I worship this Brand's Essence of Chicken since I was a student and it gives me real energy which those Red Bulls don't work on me. My sister is a hardcore addict and often brought back a suitcase full of them back to London as they cost a bomb there even though Mr. Brand is an English. Now that my parents are very weak and frail in their 80s, my sister insisted them to drink everyday as my mum's whole body turns cold like a corpse if she skips even a day! It is a miracle drink.
