Jeff Mauro’s Jewish Brisket Sandwich Recipe

Let’s join Food Network Asia’s Jeff Mauro as he shows us how to turn the humble sandwich into a gourmet meal! This time, with lots of photos for you to drool over the charming Sandwich King!

Just last week, I was invited to the #AFCStudio to Meet Food Network Asia’s Sandwich King, Jeff Mauro! Do you know that you can actually make over 200 recipes out of the simple daily staple – BREAD? Now, here’s what we call “Bread Talk”! Come, let’s get into action & let the #SandwichKing show you how to construct his Jewish Brisket Sandwich with Smoked Mozzarella & Red Cabbage Slaw!

(4 servings)
Ingredients:
One 4-pound beef brisket
Kosher salt & coarsely ground black pepper
2 tbsp extra-virgin olive oil
3 cloves garlic, peeled & crushed
2 celery stalks, cut into chunks
1 large carrot, cut into chunks
1 yellow onion, cut into chunks
2 cups red wine
2 cups beef stock
4 sprigs fresh rosemary
2 bay leaves
3 or 4 fresh thyme sprigs
1/2 cup mayonnaise
1 tbsp stone-ground mustard
4 onion rolls, buttered & toasted until golden
8 slices smoked mozzarella

Directions:
  1. Preheat the oven to 325 degrees F.

  3. Sprinkle the brisket liberally on both sides with 1 tablespoon salt & some pepper.

  5. Place a large Dutch oven or heavy-based pot over medium-high heat. Add the oil. Add the brisket & sear on all sides until deep golden brown, 10 to 12 minutes.

  7. Remove the brisket & set aside.

  9. Add the garlic, celery, carrots & onions & cook until browned, about 5 minutes. Deglaze the pot with the wine & let simmer, about 1 minute. Then, use a wooden spoon to scrape the bottom of the pot.

  11. Add the stock, rosemary, bay leaves & thyme.

  13. Add the brisket back to the pot fat-side up, cover & roast in the oven until the brisket is fork tender, about 3 hours.

  15. Transfer the brisket to a cutting board & let it rest, about 15 minutes. Strain out the vegetables & skim off some of the excess fat & reserve the jus. Slice the brisket thinly across the grain.

  17. Whisk the mayonnaise & mustard until well blended in a small bowl. Smear the top of the rolls with the mayonnaise mixture liberally. Place the mozzarella on the bottom of the rolls, pile high with the brisket & ladle the jus over top. Top with the #RedCabbageSlaw.

Red Cabbage Slaw
Ingredients:
1/4 cup freshly squeezed lemon juice (about 1 1/2 lemons)
1/4 cup red wine vinegar
1 1/2 tbsp sugar
1/2 cup extra-virgin olive oil
1/4 cup thinly sliced jarred cherry peppers
1 small shallot, thinly sliced
1/2 head red cabbage, thinly sliced (about 4 cups)
Kosher salt & freshly ground black pepper

Directions:
  1. Whisk the lemon juice, vinegar & sugar in a medium bowl. While whisking, slowly add the oil until smooth.
  2. Add the cherry peppers, shallots & cabbage. Taste & season with salt & pepper.
  3. Cover the bowl with plastic wrap & set aside in the refrigerator until you are ready to serve. Yield: 4 cups.

Carrot Cranberry Salad
Ingredients:
1/2 cup mayonnaise
1/4 cup extra-virgin olive oil
1 tbsp honey
1 tbsp white wine vinegar
Kosher salt & freshly ground black pepper
4 cups shredded carrots (about 8 medium)
1/4 cup dried cranberries
1/4 cup toasted pecans, coarsely chopped
1/2 tsp celery seed

Directions:
  1. Whisk the mayonnaise, oil, honey & vinegar in a small bowl. Sprinkle with salt & pepper.
  2. Toss the carrots, cranberries, pecans & celery seeds in a medium bowl. Add the mayonnaise-oil mixture & toss until well combined.
  3. Cover the bowl & refrigerate until ready to serve.
