Paradise Pear Soup With Snow Fungus (乐天银耳雪梨汤)

The pairing of Pears with Snow Fungus has many health benefits & what I love about this recipe is that it’s so versatile. This nutritious dish can be made into a soup by adding pork & salt, or turn it into a dessert simply by adding rock sugar.

Followers of Luxury Haven are probably aware that I love cooking with Chinese herbs. I’ve mentioned in my previous posts that Snow Fungus (雪耳) are known to lubricate our lungs, produce & nourish fluids. Traditionally, Snow Fungus has been classified as one of the precious emperor dishes.

While Snow Pears (雪梨) are known for their cooling properties, Almond (杏仁) helps to clear phlegm & stops coughing; moisturises lungs & cures constipation. So you can imagine the wonder of this simple recipe!

Ingredients:
(Serves 5)
500g Spare Pork Ribs
2 Snow Pears 雪梨 (2 slices for each guest)
3 big pieces of Snow Fungus
2 tsp Almonds
10 pitted Red Dates
2 litres of Water
2 tsp Salt

Method:

  1. Blanch pork ribs in boiling water. Drain & change water. Add pork again when water is boiling. Simmer for about an hour.

  3. Soak fungus in water till soft. Remove “stem” & cut into smaller pieces.

  5. Add into soup together with dates & almond.

  7. Remove pear skin & slice into 10 pieces, about 2  for each guest.

  9. Add sliced pears into soup & simmer for another 20 mins.

    I was thinking that snow fungus was something else until I came across your recipe. It's the average man's version to Bird's Nest, right?

  11. Hi Shirley! My grandma cooks this white fungus soup with chicken instead... plus some mushroom... your pork version looks as good... and makes me have craving for granny's soup now!

    1. Alvin, white fungus soup with chicken is one of my fave home-cooked soups too! I always add lots of mushrooms & usually use chicken feet to cook it. That is delish. Lucky u to have your grandma cooking for u :)

  14. Shirley, this one should be easy! I have done this without the meat... just the pears, dates and rock sugar.. but now you gave me an idea to add in the meat but must minus the rock sugar.. :)
