Chinese New Year Fortune Fish Maw Recipe (发财鱼鳔)

#Fish is a super food. While fish maw is an excellent source of #collagen, the health benefits of fish go beyond just the #Omega-3 fatty acids. Fish is packed with protein, vitamins, & nutrients that can lower blood pressure & help reduce the risk of a heart attack or stroke.

Fish maw is a popular Chinese delicacy often used in soups & stews, especially during the #Chinese New Year festive season. For a change, I decided to try stuffing it with some of my favourite Ingredients & steam it instead. The dish turned out wonderfully delicious, & my family loves the gelatinous texture of the Fish Maw coupled with the fragrance coming from the Mushrooms & Chinese Sausage.

*Tip: If unfortunately, the fish maw that you've bought has a strong greasy smell, soaking the fish maw in hot water repeatedly will help get rid of the smell.

Ingredients:
1 large Fish maw
1 Fish fillet
2 Chinese Mushrooms
½ Chinese Pork or Liver Sausage
1 slice of Ginger

Marinade for Mushrooms:
½ tsp Oyster sauce
Dash of Sesame oil

Marinade for Minced Fish:
1 sprig of Spring onion
½ tsp Oyster sauce
½ tsp Chinese cooking wine
Pinch of salt & pepper
Pinch of minced Ginger
Pinch of Corn flour
Dash of Sesame oil
Dash of Soya sauce

Method:

  1. Soak mushrooms & fish maw in hot water still soft. Change water repeatedly to get rid of any greasy smell in the fish maw.

  3. Dice mushrooms & sausage. I ran out of pork sausage, so I substituted with liver sausage instead.

  5. Use a chopper or blender to mince fillet.

  7. Marinate fish & mushrooms separately.

  9. Add diced mushrooms & sausage into fish. Mix well & set aside for about 10 mins.

  11. Add spring onion & mix well.
  12. Squeeze out excess water from fish maw, Boil fresh pot of water. Smash & add ginger, then fish maw & simmer for about 10 mins.

  14. Cool & squeeze out water from fish maw. Stuff fish paste into maw & steam for about 10 mins.

  16. Drain water from steaming plate to make sauce by adding pinch of oyster sauce, wine & cornstarch. You can serve your juicy fish maw in a roll or cut them up. Drizzle over maw & serve your juicy fish maw hot!

  4. Shirley, your marinade sauce for the minced fish sounds like something I'll have to try on our fresh fish out of the lake. You look "saucy" in that first photo, too... like you're cooking up something good, as usual! :)

  6. I love fish maw! And this is the first time I am seeing it being cooked in such a luxurious style! The only ones I ever had is either cooked in oyster sauce with broccoli or fish maw cooked with chicken soup. I would love to recommend your blog to my mom so that she can pamper me that way as well! =P

  7. Hello Shirley, thanks for sharing this recipe.. I usually cook fish maw with mushrooms, sea cucumbers only... but steaming with fish paste, this is something nice to try.. i have another packet left, maybe when my kids come back, I will try doing that.. :)
