Grilled Garlic Prawns With Baked Cheesy Broccoli Recipe

Found some large Prawns at Cold Storage Supermart going at half price sometime ago, so I jumped at the offer instantly. Original price was S$23.90/kg, but I paid only S$3.60 for 300g, about 5 pcs each for 3 of us!! Only problem is, the prawns have no heads. But then again, we don't really need those since it was a casual family lunch. Of course, it would look nicer with the heads for presentation.

Ingredients:
300g large Prawns
150g Broccoli
Dash of salt

Garlic Mixture:
3 tsp minced Garlic
3 tsp Butter
½ tsp dried Parsley Flakes
Dash of Black Pepper

Cheesy Broccoli:
1 tsp Butter
2 tsp Mozzarella Cheese
1 tsp Parmesan Cheese

Buttered Rice:
3 small bowls of cooked rice
1 tsp Sunflower Seeds
2 tsp Butter

Method:
  1. Cut broccoli into bite-size pieces. Soak in salt water. Drain & set aside. I'm not sure how true this is, but I read somewhere ages ago that salt water helps to remove any worms hidden inside the broccoli. I've since adopted this method & never dare to challenge that.
  2. Rinse & butterfly prawns. Devein & rinse again. Rub prawns lightly with salt.

  4. Spread the Garlic mixture thinly on the prawns. Not too thick layer or you'll be biting into raw garlic.

  6. Grease baking tray & arrange prawns neatly on it.

  8. Preheat oven on high heat. Grill for about 7-10 mins depending on your oven.

  10. While the prawns are in the oven, quickly blanch broccoli in boiling water & drain.

  12. Grease casserole. Put the broccoli in it & mix well with butter. Top with Mozzarella, then Parmesan cheese.

  14. Bake at 250° for about 3-5 mins or till golden brown.

  16. Grease a bowl with butter. Mix sunflower seeds into cooked rice & scoop into bowl. Turn bowl upside down onto serving plate. When prawns & broccoli are ready, transfer onto serving plate & you'll get a delicious meal.

  7. Shirley, this sounds like a great "cool weather" meal with oven-baked goodness. Had to smile about soaking the fresh broccoli -- when I stayed with my folks, a friend gave them 3 beautiful bunches of it from their garden. I soaked it in salt water, too. It works!
