Well, I had an opportunity to attend A Masterclass with Chef Julien Bompard of the award-winning French Restaurant, Le Saint Julien, at the AFC Cooking Studio. The Cooking Demo was brought to you by the Asian Food Channel, teaming up with DBS Indulge, to present unique opportunities to savour signature creations as well as to learn culinary arts from renowned chefs.

It was another pleasant evening of fun & laughter, where curious foodies & wine lovers discover meticulously paired food & wine.

Tantalize your taste buds as Chef Julien at the DBS Masterclass shared superb French cuisines with valuable culinary tips in this one-night-only event at the AFC Studio.

First dish for that evening was Le Saint Julien French Summer Terrine.

Chef Julien cut up Zucchini, Spinach & Bell Pepper, blended, then baked the puree into a “Provençale” Zucchini Terrine.

The hearty chilled appetizer was served with Tomato Gazpacho. A dash of Olive Oil, coupled with the Provencette Toasts did wonders to the Zucchini starter.

Paired with Chateau La Nerthe Chateauneuf du Pape Blanc 2010, the refreshing White Wine has a bouquet of white flowers & grany smith apples.

Next on the menu was the Chef's Special “Le Saint Julien”, something I can never resist. Can you tell what it is from the pix?

The Duo of Custard & Pan Seared Foie Gras had the guests salivating at their tables. I was drooling as I watched the Chef cut up the goose liver, pan-frying some while blending the rest to make into a custard. The exquisite French cuisine was served together with Chateauneuf du Pape Rouge 2006. The Red is complex with touch of cherry, blackberry, blackcurrent & spice like black pepper.

The first time I tried Foie Gras done in this manner was at Restaurant Andre, an invitation from Fendi for their newly launched handbag. I love it, as it's very different from the usual pan-fried style of cooking. And now, I can whip up my own, after attending this cooking demo! I'll be back with the recipe, so be sure to look out for it!

I was one of the lucky few who got a double "dosage" of the Pan-Fried Foie Gras. Thank U, Chef!

The relaxed & jovial Chef Julian, sipping his glass of white wine occasionally, demonstrated how cooking can be enjoyable & stress-free. I love how he mingled with the guests by going around serving foodies with this freshly-whipped Chocolate Mousse.

AFC's guests hit a high note with Chef Julian's "Signature" Caramelized Chocolate Mousse. Accompanying the dessert was the full-bodied Chateauneuf du Pape Cuvee des Cadette 2006.

A magnificent Red Wine with deep ruby/purple colour, a wonderfully sweet focus. Perfect to wrap up the gourmet tasting session, especially with more treats on the table!

  6. Shirley, I'm finally home and have been catching up on reading your blog -- an absolutely wonderful way to spend a Sunday afternoon, in your company! Thanks for keeping in touch during my absence -- my Dad was finally able to be off "home-bound" status, so my care-giving days have come to an end. My Mom said she'll miss my cooking, though! :)

    Looks like you've had some exciting adventures -- this one was near and dear to my heart -- what a thrill to participate in a master class!
