Happy Call Recipe: Fluffy Minced Pork Omelette (肉碎煎蛋)

I’m using my Happy Call Pan this time, to whip up another egg dish - Minced Pork Omelette (肉碎煎蛋), following my last Yummy Shrimp Omelette Recipe (虾仁煎蛋饼) that drew quite a response.

Look how nice it turned out with the Happy Call Ocher Pan! So let's get cooking!

Ingredients:
5 Eggs
100g minced Pork
1 sprig Spring Onion (chopped)
½ Chilli (shredded)
1 tsp minced Garlic
½ tsp Thai Fish sauce
Pinch of Salt
Dash of Pepper
½ tsp Extra-virgin Olive Oil (optional)

Marinade for Pork:
1 tsp Oyster sauce
½ tsp Sesame Oil
Pinch of Salt
Dash of Pepper

Method:
  1. Marinate pork for at least 30 mins. Heat and lightly grease pan with oil. Stir-fry pork till half-cook and add garlic.

  3. Meanwhile, whisk eggs. Add chilli, spring onion and seasonings. Mix well.

  5. Pour in eggs and stir lightly. Close lid if using HCP.

  7. HCP user: When you see steam, flip pan over. Open lid to check, ensuring omelette is well in place. Close it back.

  9. Flip pan over after 2 mins. Your fluffy omelette is done. Depending on preference, you may leave it longer to brown.
  10. Non-user: Turn omelette over when it's almost set and your're ready to serve. For more details, click on the Prawn Omelette link above for reference.

  5. That looks like a fabulous egg recipe and seems the pan is doing a wonderful job in bringing out the lovely outcome. I am gonna leave out the pork and try with some veges as your recipe for our meal at home.

  6. The marinaded pork is what really makes this omelette really special. Actually I have never had any omelette with asian flavors in it, bit trying new things is always fun. Enjoy the weekend!

  10. I'm SOOOO glad you posted this recipe, Shirley! I put together an "oven omelette" to bake this morning and realized I forgot to put in the spring onions, lol! (I still have time to sprinkle some in, thankfully.) Will think of you when we eat breakfast later. :)

  18. Hi, I thought of buying the deep pan too but just like to ask if the food will leak when u flip and open to check cuz the cover of the pan looks thinner then the base. Will the egg be too thick and the other side (top) of the pan couldn't hold when you flip?

    1. Oil did leak from the oil tray when I was frying fish. However, I didn't get this problem from the Ocher Pan, maybe cause it's thicker. Food doesn't spill out at all. No problem doing the egg & it turned out well, except there's too much movement when u flip. U just need to adjust accordingly. I think it's easier making omelette with the red pan.
