Hot & Juicy Baked Cheesy Bacon Scallops

The show is on! This cheesy hot appetizer was the center of attention @ Merry X’mas With Love From Singapore. It was remarkably juicy & flavourful!

The best compliment came from my hubby, who is a fussy eater. He was full of praises for this dish & it meant a lot. As the saying goes, “Best way to a man’s heart is through his stomach” & I think I did it! Hooray!!

I went on a shopping trip with my students & got these nice big scallops @ Seafood Bargains At Woodlands Terrace. It came in a pack of 9. Since there were only 5 guests, I’d 4 to experiment with in the morning. My son is always happy to be my guinea pig & I know just one scallop isn't going to be enough for him.

When I was preparing the filling, I didn’t add Parmesan Cheese initially. The scallops came out a little bland, somehow lacking some punch. But I didn't want to add salt to destroy the natural taste. So I decided to sprinkle Parmesan cheese just before adding the Mozzarella & it turned out perfect! Here’s presenting you my very own Baked Scallop x'mas recipe!

(Serves 5)
Ingredients:
5 Scallops
5 Lemon wedges
1 Strip of streaky bacon
Parmesan & Mozzarella cheese for toppings
Butter for greasing

Fillings:
1 tsp Garlic (chopped)
1 tbsp Butter
1 tsp Extra-virgin Olive Oil
½ tsp Parsley flakes
1 tsp Panko crumbs

Method:
  1. Remove gills by using a toothpick. Rinse thoroughly to remove any dirt.

  3. Lightly grease shells with butter. Mix fillings in a bowl & spread on scallops.

  5. Cut bacon into strips & put them on seafood. Sprinkle Parmesan Cheese & then top with Mozzarella Cheese.

  7. Preheat oven to 250 deg & bake for 10mins. Serve with lemon wedge. Here’s your Baked Cheesy Bacon Scallops, fresh from the oven!

OMG Shirley, DROOL!!!!!! i love seafood and scallops is one of my favorites. i wouldn't mind being your food guinea any day that your son is busy...teehee. love the use of panko breadcrumbs for a contrast in texture. i can never say no to ooey gooey cheesiness. this is going into my bookmarks for sure. thank you for sharing, Shirley!
