Oh yes, this recreated Egg-white Frittata Recipe submitted to MediaCorp has won "The Frugal Gourmet" Contest 2009!
3 cherry tomatoes or 1 tomato
3 stalks of asparagus
2 tbsp tuna flakes (optional)
1 tbsp olive oil
Salt & pepper to taste
- Slice the tomatoes into stripes (use only outer layer). Blanch the asparagus & cut into 3 equal portions.
- Separate the yolks from the whites. Keep the yolks for other uses. Whisk the whites till fluffy. Add salt & pepper.
- Heat oil & add whites. Pour half of the cut vegetables & tuna onto whites. When egg is half-cooked, add the remaining veg. Send the pan into the oven & grill for about 1 - 2mins & you got your lovely Egg-white Frittata for breakfast!
