Recipe: Fungus Chicken with Ginkgo Nuts

Therapeutic Effects:
Ginkgo nuts (白果) - frequently misspelled as "Gingko", are particularly esteemed in Asia & some consider them to have aphrodisiac qualities. Ginkgo nuts are used in congee & are often served at special occasions such as weddings & the Chinese New Year.

Wood-ear Mushroom/Black Fungus (黑木耳) – Commonly known to alleviate “dryness” & promote circulation of the body. Black fungus particularly aids in nourishing the lungs, stomach & liver. More importantly, due to its rich iron content, it’s exceptionally good for helping to purge the body of stale blood.

Ingredients:
1 chicken
100g black fungus
10g of cooked Ginkgo nuts
4 slices of old ginger
1 cup of water
2 tbs oyster sauce
1 tbs cooking oil
1 tbs sesame oil
1 tbs Chinese wine
2 tsp black sauce
1 tsp soya sauce
½ tsp corn flour
½ tsp salt

Method:
  1. Clean & wash the chicken. Cut the chicken & keep the chicken feets & back bone in the freezer for making stock next time.
  2. Marinade the chicken with the sauces (for oyster sauce, use only 1 tbs) for an hour.
  3. Soak the fungus till soft.

  5. Cut the ginger into stripes & add to heated oil. Add chicken & stir-fry. Add water & cook on low fire for about 30 mins.
  6. Add fungus, Ginkgo, 1 tbs oyster sauce & simmer for another hour. Add more water if you prefer more sauce.how to cook chinese fungus chicken
  7. Serve hot.
